Abstract:The growth kinetics of Listeria monocytogenes in broth under different temperatures were investigated and the models established were validated.Firstly,Gompertz model was employed to describe the growth of L.monocytogenes at constant temperatures as a function of storage time.Secondly,Linear model,Square root model and Ratkowsky model were established for the obtained maximum growth rate,and then current models were verified by several indices such as the sum of squares due to error (SSE),coefficient of determination(R2),adjusted R2and root mean square error(RMSE).The results showed that Ratkowsky model had a better statistic fitness than the other two models and the verification indicated the model established was able to make reliable prediction in the future.
