    摘要:

    在不同温度下对单增李斯特菌在营养肉汤中的生长建立动力学模型,并对所建立的模型进行验证。使用Gompertz模型描述特定温度下单增李斯特菌随储藏时间变化的生长状况,对得出的最大比生长速率分别建立Linear、Square root和Ratkowsky预测模型,并对所建立的模型进行比较验证。结果表明:Ratkowsky模型对最大比生长速率-温度拟合度最高(R2=0.999 7),经验证,该模型可以很好地预测单增李斯特菌在营养肉汤中的生长情况。

    Abstract:

    The growth kinetics of Listeria monocytogenes in broth under different temperatures were investigated and the models established were validated.Firstly,Gompertz model was employed to describe the growth of L.monocytogenes at constant temperatures as a function of storage time.Secondly,Linear model,Square root model and Ratkowsky model were established for the obtained maximum growth rate,and then current models were verified by several indices such as the sum of squares due to error (SSE),coefficient of determination(R2),adjusted R2and root mean square error(RMSE).The results showed that Ratkowsky model had a better statistic fitness than the other two models and the verification indicated the model established was able to make reliable prediction in the future.
