    摘要:

    为明确雪茄烟叶不同晾制工艺下变黄期非结构性糖类与质体色素的变化情况及相关关系。以云雪2号作为试验材料,设定同一温度条件下,不同环境湿度对雪茄烟叶晾制变黄期烟叶内在化学成分的变化。结果显示(1)不同晾制工艺下,烟叶晾制期间质体色素、淀粉含量整体呈下降趋势,葡萄糖、果糖、蔗糖整体呈上升趋势。(2)高湿处理烟叶叶绿素含量降解速率缓慢,但降解周期长,而高湿与中湿处理在变黄96h之后含量便趋于较低水平,变化不明显。(3)低湿处理葡萄糖与果糖含量在变黄前期积累量明显增加,在变黄144h之后增量较小,而中湿与高湿含量变化趋势与低湿相反,在变黄前期增量不明显,而在变黄144h之后显著增加;不同处理下淀粉与蔗糖含量变化趋势几近相同。(4)相关性分析结果表明,晾制过程中质体色素含量与非结构性糖类含量变均达到了显著或极显著水平。综上,高湿与低湿均影响了雪茄烟叶晾制的进程,适当的湿度促进了烟叶内质体色素和大分子糖类的降解,有利于高品质雪茄烟叶的形成。

    Abstract:

    In order to clarify the changes and correlation between non-structural carbohydrates and plastid pigments in cigar tobacco leaves at yellowing stage under different air-curing processes. Taking Yunxue No.2 as the test material, the changes of internal chemical components of cigar tobacco leaves in yellowing stage under different environmental humidity were set at the same temperature. The results showed that : ( 1 ) Under different air-curing processes, the contents of plastid pigment and starch in tobacco leaves showed a downward trend during air-curing, while the contents of glucose, fructose and sucrose showed an overall upward trend. ( 2 ) The degradation rate of chlorophyll content in tobacco leaves treated with high humidity was slow, but the degradation cycle was long, while the content of high humidity and medium humidity treatment tended to be low after 96 h of yellowing, and the change was not obvious. ( 3 ) The accumulation of glucose and fructose content in low humidity treatment increased significantly in the early stage of yellowing, and the increment was small after 144 h of yellowing, while the change trend of medium humidity and high humidity content was opposite to that of low humidity, and the increment was not obvious in the early stage of yellowing, but increased significantly after 144 h of yellowing ; the change trend of starch and sucrose content under different treatments was almost the same. ( 4 ) The results of correlation analysis showed that the changes of plastid pigment content and non-structural carbohydrate content reached significant or extremely significant levels during the air-curing process. In summary, both high and low humidity affected the process of air-curing of cigar tobacco leaves. Appropriate humidity promoted the degradation of plastid pigments and macromolecular sugars in tobacco leaves, which was conducive to the formation of high-quality cigar tobacco leaves.
