Abstract:Flavor is an important factor to determine the overall quality of citrus fruit, which directly affects consumers" purchase preference. Flavoromics is an omics technology to analyze the metabolites basis of flavor quality. Citrus contains sweet and sour, aroma, bitter, texture, off-flavor and other flavor attributes. In this paper, the emergence, research strategies, methods and advances of citrus flavoromics were reviewed and prospected. In order to assure the healthy development of citrus industry, we should pay more attention to consumer preference and explore the main metabolites that affect citrus flavor.
