Abstract:Based on HACCP,this paper built an evaluation system of food quality and safety which is suitable for the national situation of China and evaluted the dinning halls in colleges and universities of Nanjing.The results showed that purchase link is the most important link among the four links of purchasing,storing,processing and marketing,but processing link is the most complex and uncontrollable link.Multiple linear regression method was used to analyze the influencing factors of food quality and safety in university dinning halls.Nature of university,motivation and welfare of employees,area of processing room have significant influence on food quality and safety in university dinning halls.By evaluating food quality and safety of university dinning halls as well as its influencing factors,this paper put forward some suggestions on how to strenghten the management of food quality and safety in university dinning halls,which is of great importance to the improvement of food safety in China.
